Amazing Raw Granola

Yields 6 cups

 

This amazing granola can be stored for up to a month, sealed in a fridge. It is great to snack on or as a hearty breakfast with some rich nut milk. Kids love it also!

 

1 ½ cups soaked almonds

½ cup soaked sunflower seeds

½ cup soaked buckwheat raw groats (not roasted)

3 large apples cut up small or grated

½ cup dates (about 7 large dates)

½ cup cranberries or raisins or chopped unsulphured apricots

½ cup dry coconut

½ cup coconut butter

½ cup agave nectar or maple syrup

1 tea. vanilla extract

2 tea. ground cinnamon

½ tea. salt

 

Mix all ingredients in a large bowl, making sure everything is fully incorporated. Place on two or more teflex dehydrator sheets and dehydrate for one hour at 135° degrees and then lower heat to 105° degrees and dehydrate for 16-24 hours (this may be longer in damp climates).

    I want to make your granola but I don’t have a dehydrator. Can I cook in the oven, if so, how long????

    • Yes, of course! If you want to keep it raw, heat your oven to the lowest setting and keep the door open a little when baking (even flipping the temp off for awhile and then on again to reheat). It may take a little while doing it like this (several hours) and check back periodically to make sure it is not too hot for your finger to sit in the granola. Unfortunately it is not the most power-conservative method, however, this will ensure it stays raw.

      If you still want to enjoy it, without keeping it raw, I’d recommend baking at 250 degrees for about an hour and 15 minutes, making sure to keep mixing it to evenly cook.
