Here is one of my favorite cooked vegan dishes, perfect for a raw transition. It is high in protein, antioxidants, vitamins and minerals.
Cooked Transition Recipe: Roasted Corn and Quinoa Salad
Serves 4
This recipe is excellent served with any raw soup and salad. It is packed with protein and a really filling supper. It tastes even better the next day and makes great leftovers for family lunches.
1 tablespoon olive oil
1 cups corn kernels (fresh or frozen)
2 tablespoons chopped onion (I prefer red)
1 cups quinoa, cooked according to package directions
1 medium tomato, diced
2 cups black beans, rinsed and drained (If you can soak dried beans than do so (also boil for an hour after overnight soaking), if not opt for an organic, BPA-free can, such as Eden Organic).
3-4 tablespoons of fresh lime or lemon juice, to taste
1/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 cup chopped cilantro
1/4 teaspoon ground dried chile (optional)
